 Summers are hard to handle specially when you have to avoid all the yummy and refreshing drinks which contains alot of sugar.

And it's when the cucumber raita comes to my rescue, I eat it without any worries as it does not increase my blood sugar levels plus its that one thing which keeps me cool in summer and save me from all the heat problems and is so refreshing. One of the best thing to eat during summers.


And making it also is so easy :)

Ingredients:

  • Cucumber - 1 kg grated
  • Curd - 500 grams.
  • Cumin Seeds - roasted
  • Butter - 1/2 tbspn
  • Red Chilli Powder  and salt.

Recipe:

Mix the grated cucumber with curd. And in a small pan - heat the butter, put cumin seeds and wait till they become dark brown, and then add the red chilly powder and pour this on the curd-cucumber mixture. Add salt to taste and that's it. so easy and so yummy.

Tip: Cucumber raita is made best when you use grated cucumber , so don't use sliced cucumbers.

This is how it looks, though I haven't put chilly powder in it . It looks and tastes more cool with the dash of red chilly powder in it :)
